Loins of about 800-900gr obtained from adult and thick codfish.

ALMA uses raw codfish, fished sustainably and exclusively by hook, in line with MSC certification. The cod is placed in a brine solution of water and salt for several days. This process produces “light-salted cod,” emulating the traditional method but with a shorter duration. Since the salting level is lower than in the traditional method, there is no need for desalting.

 

How to Defrost Packed Cod Fish
  1. Remove from Packaging: Take the cod out of its bag and place it in a bowl.
  2. Defrost in the Refrigerator: Put the bowl inside the fridge and allow the cod to thaw completely. This ensures safe and gradual defrosting.
  3. Rinse and Dry: Once defrosted, rinse the cod thoroughly under cold water.
  4. Pat it dry with kitchen paper to remove excess moisture.

 

Why This Matters
The water released during defrosting can have a slight smell (common for frozen fish). Drying improves texture and flavor before cooking.
