- 2 teaspoons La Perruche cassonade
- 10cl hot coffee
- 4cl Lapsang souchong tea
- 4cl whipped cream
- Brew the tea.
- Mix with the La Perruche sugar and coffee in the glass until the sugar has dissolved.
- Put the cream in a whipped cream dispenser and aerate using a charger.
- Carefully squirt the cream onto the surface of the cocktail.
- Serve straight away
