- 15g La Perruche cassonade
- 2cl lemon juice
- 1/2 white from one egg
- 10 fresh raspberries, in season
- 6cl cranberry juice
- Put all the ingredients in a cocktail shaker and give it a good shake.
- Pour through a cocktail strainer and small fine-mesh conical sieve (chinois) to get rid of the raspberry seeds.
- Serve chilled.
